Spinach and Kale Flat-bread Pizza

Every now and then when we aren’t in a cooking mood,  my family orders in pizza rather than ordering take-out. We use to have a go-to pizza place but lately the pizzas weren’t that great anymore, so we started to venture out to find a better one. We still haven’t found one to say the least and it looks like it wont be anytime soon. But after a recent trip to Costco the other day, we might be reconsidering this whole pizza situation. While perusing the bakery section at Costco, my mom grabbed a bag of Naan bread. We’ve always seen them around but never really paid any attention to them till that day. We bought a 12 count pack of Naan without knowing what we were going to do with them. A few days went by and we still didn’t know what to do with them, so we threw them in the freezer to prevent them from spoiling.

Then it finally hit me, two word came to mind: FLAT-BREAD PIZZA.  I told my mom and she wasn’t really sold on it. So I begin getting the ingredients ready to make a “test” pizza. By the time I was ready to put my pizza in the oven, my whole family was all in on it. We each made our own flat-bread with our own favorite toppings but they were all topped with the same veggies. These flat-bread  pizzas are easy, and quick to make. You can make them healthy or not so healthy, vegan as well. I have yet to find a vegan cheese that actually melts like cheese, so when I do you guys will be the first to know.

Down below I listed the different toppings and “sauces” that we used to make our flat-breads pizzas. We all had a different sauce on our pizzas and for the most part, some of the same toppings and they all tasted great. So you really can’t mess things up.

Sauces (Choose one)
  • Pesto
  • Roasted Pepper Hummus
  • Cream Cheese
  • Tomato Sauce

 Toppings (Choose two to three)

  • Roasted Red Peppers (Fresh or Jarred)
  • Crushed Pecans
  • Goat Cheese crumbles
  • Feta Cheese crumbles
  • Shaved Parmesan Cheese
  • Sliced Mozzarella Cheese
  • Tomato Slices
  • Sun-dried Tomatoes

Sauteed Veggies

  • Organic Spinach or Kale (Fresh or Frozen)
  • Diced Onions
  • Minced Garlic
  • Bell Peppers
  • Red Pepper Flakes
  • Italian Seasoning
  • Black Pepper
  • Olive Oil
Heat the olive oil in a large saute pan over medium heat. Add the onions, garlic and pepper and saute for 5 to 10 minutes. Add the  spinach or kale, red pepper flakes, Italian seasoning, salt and pepper and continue cooking an additional 10-15 minutes. Let cool for about 5 minutes.
Spread the “sauce” of your liking evenly on the Naan, then add the sliced mozzarella on top. Add a generous layer of  the sauteed veggies. Sprinkle shaved Parmesan cheese, goat cheese crumbles, red pepper flakes and any additional topping that you like.

Place the flat-breads on a lined baking sheet and bake for about 20 minutes at 350 degrees, or until the crust is slightly golden.

Let cool for 4-5 minutes and slice.
