Pumpkin Spiced Apples with Coconut Yogurt Kefir Chia Pudding

It’s my favorite time of the year, Fall! And with the start of fall means all things pumpkin and pumpkin spice. Though there’s not much of a weather difference in south Florida yet it doesn’t mean that I have to wait on the seasonal flavors of the season. So to spice things up a bit but to also keep things cool, my mornings have been a mix of my favorite Coconut Yogurt Kefir Chia Pudding with a quick pumpkin-spiced apple topping that is great as is or warmed.

Chia Pudding is often made with non-dairy plant-based milk but I prefer the texture of Greek yogurt and Kefir mixed together for my chia puddings. I find that the chia pudding is creamier, thicker in consistency, contains more protein to keep you satisfied and provides a good dose of probiotics. Kefir offers triple the amount of probiotics but its flavor is more tangy or sour in taste than the usual yogurt. So I recommend sweetening it up a bit or use flavored kefir until it becomes more palatable to you. To make the chia pudding start off with even amounts of Greek yogurt and Kefir, coconut flakes, and 4 to 5 tbsp of chia pudding, vanilla extract, and sweetener if needed. This makes about two servings and can be made ahead a time for easy meal prep.

For the pumpkin spiced apples, all you need is 4 ingredients.

  • Apples
  • Pumpkin spice,
  • Vanilla extract
  • Sweetener of your choice (I used coconut sugar).

Stir together until everything is combined and you have a combo that pairs the delicious crunch and sweetness of apples and the warm spiciness of cinnamon, ginger and cardamon that pumpkin spice is known for. For a warmer version cook the apples with 2tbsp of butter or coconut oil until softened. As always top you chia pudding with your favorite crunchy topping and breakfast is served! I used salted roasted pumpkin seeds and hemp seeds for added crunch and additional fats and protein but almonds, pecans, walnuts and even white or dark chocolate would work well with this combo.

Ingredients

Pumpkin Spiced Apples with Coconut Yogurt Kefir Chia Pudding

    Coconut Yogurt Kefir Chia Pudding

    • 1 (5oz) container of your favorite yogurt
    • 5 ounce Unsweetened or Vanilla flavored Kefir
    • 2 tbsp Coconut flakes
    • 4-5 tbsp Chia Seeds
    • Splash Vanilla Extract
    • Sweetner of choice (optional)

    Pumpkin Spiced Apples

    • 2 medium size Gala or Honey Crisp apples (diced)
    • 1-2 tbsp of coconut sugar or your favorite choice of sweetener
    • 2-3 tsp Pumpkin spice
    • Splash of vanilla extract
    • 2 tbsp butter (optional)

    Instructions

    Coconut Yogurt Kefir Chia Pudding

    • In a medium size bowl add the yogurt and kefir to the the bowl and combine.
    • Add the coconut flakes, vanilla extra, and chia seeds and combine. Let set in the fridge, covered for 30 minutes to overnight.

    Pumpkin Spiced Apples

    • Dice the apples and add to a small bowl, add sweetener of your choice, vanilla extract, and pumpkin spice. combine evenly. Add as topping to the Chia Bowl
    • If warmed, cooked the apples in a small saute pan with 2 tbsp of butter till soften. Serve immediately.
