Two Ingredient Dough Bagels-Cucumber Avocado Lox Bagel Sandwich

Baking is a favorite past time of mine, I love how a cup of flour, some butter and sugar can turn into something so tasty and amazing. So you can only imagine my amazement when I realized you can make bagels with only two ingredients. Sure these are not authentic NewYork Bagels, but with this social distancing and quarantine going on throughout the world, these will do for now. The bagel comes together pretty quick and there’s no need to proof the dough or boil. In about 30 minutes you’re well on your way to fresh homemade bagels.

Making different varieties of flavors are pretty easy too, on the most recent  Forksandstraws Youtube video I demonstrate how I made cinnamon raisin and everything flavored bagels with just a few ingredients. Cinnamon, Raisins, and a jar of Everything seasoning from Trader Joes. I also made a Cucumber Avocado Lox Bagel sandwich that will satisfy all your breakfast bagel and brunch goals. The recipe is added down below for your convenience. The bagels in general last about 3 -4 days if stored properly in a container, but it literally didn’t last that long cause my family enjoyed it that much.

One major takeaway for this recipe: Use full-fat whole milk greek yogurt for a balanced rich taste from the natural fat and salt.  You can make this vegan by using vegan greek yogurt as well. Also, If you don’t have self-rising flour you can use all-purpose flour and add 1 1/2 teaspoons baking powder and 1/4 teaspoon fine salt for each cup of flour.

Ingredients

2 Ingredient Dough

  • 2 cups self rising flour
  • 2 cups plain greek yogurt

Cucumber Avocado Lox Bagel Sandwich

  • 2 tbsp Cream cheese
  • 3 oz Lox or Smoked Salmon
  • ¼ cup Cucumber sliced
  • ½ Avocado sliced
  • ½ handful Arugula
  • ½ Lemon squeezed
  • 1 tsp Red Pepper Flakes
  • 1 tsp No Salt Seasoning

Instructions

Two Ingredient Bagels

  • In a large mixing bowl, add the self-rising flour and Greek yogurt. Combine evenly using a spatula or wooden spoon then knead the dough with you hands-on a floured surface till the dough is smooth. If the dough sticks to your hand or surface add a little more flour as necessary.
  • Cut into  8 even pieces and roll into balls.
  • With your hand lightly dusted with flour, Poke a hole in the center of the dough ball and shape the dough into a bagel shape. The hole of the bagel should be about 1 to 2 inches in diameter.
  • Place the dough on a parchment-lined baking sheet. In a small bowl, beat one egg with a teaspoon of water.
  • Coat the dough with egg wash with a brush or your hand then sprinkle your seasoning of choice on top.
  • Bake for 20-23 minutes at 450 degrees.
  • Let cool before serving.

Cucumber Avocado Lox Bagel Sandwich

  • Cut the bagel in half. Spread the cream cheese evenly on both sides of the bagel
  • Place the sliced cucumber on one side of the bagel. Season it with cayenne and no-salt seasoning
  • On the other side of the bagel layer the arugula evenly and top it off with the lox. Add a few slices of Avocado. Squeeze the juice of the lemon over the cucumber and lox side. Put the bagel together
  • Serve immediately and enjoy.
